The pergamot orange is a delightful cross between lemon and sour orange, with a tart, refreshing flavor. It can be added to marinades, muffins, bbq sauce, salad dressings, as well as spread on toast. The fruit itself is thick and in rather large chunks. Bergamot is a citrus, famous for flavoring earl gray tea.
