Conservas Ortiz preserves their fresh anchovies (boquerones) using a totally traditional method and always follow strict quality controls. They fillet them by hand, one by one, and marinate them in wine vinegar. Once they have reached optimum maturity, they pack them in olive oil, garlic and parsley. Their unique, delicate flavor makes them ideal for serving dressed in balsamic vinegar with chopped onion.
