Hailed as the "king of Italian rice" and beloved by chefs around the world, carnaroli is a medium-grained rice grown in the provinces of northern Italy. The grains are well-shaped, and they are the longest and thickest of the superfino rice. It has a higher starch content rich in amylose, which gives the rice a greater consistency during cooking and better absorption of the ingredients. The kernels have a firmer texture which results in a rich, velvety bowl of risotto. Beretta uses the "protected storage" method, one that naturally preserves the rice, maintaining all its nutritional properties and freshness. Thanks to this kind of protection, the product does not require preservatives.
