Traditionally, harissa is mixed with oil to make a loose hot sauce to season couscous and tagines. This red pimento chili paste is not extremely hot, so it adds a nice garlicky flavor without overwhelming other ingredients in a recipe. Also, rub onto pork or chicken as a marinade before roasting or grilling, add to hot or cold sauces for flavor enhancement, or spread a dab on a sandwich.
